- In a mixing bowl, blend cream cheese and powdered sugar using an electric mixer until smooth. Portion out teaspoons of the filling, flatten slightly, and freeze for 45-60 minutes until solid.
- Preheat your oven to 350°F (175°C). Beat butter, light brown sugar, and granulated sugar until fluffy. Mix in egg and vanilla extract. Gradually add flour, cocoa powder, baking soda, and salt until combined; fold in chocolate chips.
- Shape cookie dough into balls, flatten slightly, and encase each frozen cheesecake filling ball. Optionally press additional chocolate chips on top before placing on a baking sheet.
- Bake for 9-12 minutes, until edges are set but centers remain soft. Cool on the baking sheet before transferring to a wire rack.
