Ingredients
  

Cheesecake Filling
  • 8 ounces cream cheese vegan cream cheese for dairy-free
  • 1 cup powdered sugar adjust based on cream cheese used
Cookie Dough
  • 1/2 cup butter substitute with vegan butter for dairy-free
  • 1/2 cup light brown sugar can use granulated sugar if needed
  • 1/2 cup granulated sugar for best results
  • 1 large egg or use a flax egg for vegan option
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour gluten-free flour can be used
  • 1/2 cup unsweetened Dutch processed cocoa powder ensure it's Dutch-processed
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda avoid substitutes unless using baking powder
  • 1 cup semisweet chocolate chips dark or white chocolate chips can be used

Method
 

Instructions
  1. In a mixing bowl, blend cream cheese and powdered sugar using an electric mixer until smooth. Portion out teaspoons of the filling, flatten slightly, and freeze for 45-60 minutes until solid.
  2. Preheat your oven to 350°F (175°C). Beat butter, light brown sugar, and granulated sugar until fluffy. Mix in egg and vanilla extract. Gradually add flour, cocoa powder, baking soda, and salt until combined; fold in chocolate chips.
  3. Shape cookie dough into balls, flatten slightly, and encase each frozen cheesecake filling ball. Optionally press additional chocolate chips on top before placing on a baking sheet.
  4. Bake for 9-12 minutes, until edges are set but centers remain soft. Cool on the baking sheet before transferring to a wire rack.
