Step-by-Step Instructions
  1. Press the tofu for 30 to 60 minutes to achieve a crispy texture.
  2. Preheat the oven to 400°F (200°C) and prepare a baking sheet.
  3. Cut the pressed tofu into 2-inch squares and coat with soy sauce and cornstarch.
  4. Bake the tofu for 25 minutes, flipping halfway through.
  5. Cook coconut rice by rinsing rice and simmering with coconut milk and water for 18 minutes.
  6. Make the peanut sauce by combining all sauce ingredients in a saucepan over medium heat.
  7. Combine crispy tofu with peanut sauce and serve over coconut rice, garnished with cilantro and peanuts.
