Method
 

Cooking Instructions
  1. In a large mixing bowl, combine the boneless chicken pieces with the egg white, cornstarch, salt, and black pepper. Let marinate for 10-15 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat until shimmering. Fry the marinated chicken in batches for 4-6 minutes, flipping halfway through, until golden brown.
  3. In the same skillet, reduce heat and add sesame oil. Sauté minced garlic, ginger, and dried chilies for 1-2 minutes. Add ketchup, soy sauce, chili garlic sauce, vinegar, and sugar; simmer for 2-3 minutes.
  4. Combine the crispy chicken with the sauce in the skillet and toss to coat. Simmer for another minute.
  5. Remove from heat, garnish with green onions and sesame seeds, and serve alongside steamed rice or tossed noodles.
