  • 2 tbsp Fish Sauce Substitute with gluten-free soy sauce for a gluten-free version.
  • 1 tsp Sugar Balances the spiciness; adjust to taste.
For the Finish
  • 3 pieces Chopped Spring Onions Provides crunch and brightness.

For Cooking
  • 2 tbsp Vegetable Oil Ideal for cooking at high heat.

Method
 

Step-by-Step Instructions
  1. In a large pan or wok, heat 2 tablespoons of vegetable oil over medium heat until shimmering, about 2 minutes.
  2. Add 2 tablespoons of chopped garlic to the hot oil, stirring continuously for about 1 minute until golden brown.
  3. Stir in 3 tablespoons of Thai chilli paste (Nam Prik Pao) and sauté for another minute until fragrant.
  4. Gently fold in 500g of blue swimmer crab, stirring well to coat the crab pieces in the spicy mixture and cook for about 5 minutes.
  5. Pour in 2 tablespoons of fish sauce and sprinkle with 1 teaspoon of sugar, mixing thoroughly for about 1 minute.
  6. Toss in 3 chopped spring onions, and turn off the heat.
  7. Transfer the stir-fried crab to a serving plate and garnish with sliced chilies.
