- In a large pan or wok, heat 2 tablespoons of vegetable oil over medium heat until shimmering, about 2 minutes.
- Add 2 tablespoons of chopped garlic to the hot oil, stirring continuously for about 1 minute until golden brown.
- Stir in 3 tablespoons of Thai chilli paste (Nam Prik Pao) and sauté for another minute until fragrant.
- Gently fold in 500g of blue swimmer crab, stirring well to coat the crab pieces in the spicy mixture and cook for about 5 minutes.
- Pour in 2 tablespoons of fish sauce and sprinkle with 1 teaspoon of sugar, mixing thoroughly for about 1 minute.
- Toss in 3 chopped spring onions, and turn off the heat.
- Transfer the stir-fried crab to a serving plate and garnish with sliced chilies.
