Preparation
- Preheat your oven to 400°F (200°C) and prepare your baking sheet with parchment paper.
- Peel and chop the carrots into uniform pieces. Core and slice the apples into wedges.
- In a mixing bowl, whisk together Dijon mustard, maple syrup, and olive oil until smooth.
- Combine the chopped apples and carrots in a large bowl, then pour the glaze over and toss until coated.
- Spread the glazed apples and carrots on the baking sheet and roast for 25-30 minutes, stirring halfway through.
- Remove from the oven and let cool for 5 minutes before serving warm.
