  • 1 pound boneless skinless chicken breast cut into chunks

  • 1 medium lemon juice and zest
  • 3 cloves garlic minced
  • 1 teaspoon oregano or Italian seasoning
  • 1 teaspoon paprika can use smoked paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
For the Pitas and Salsa
  • 4 pieces whole wheat pitas or any flatbread
  • 1 medium Persian cucumber chopped
  • 1 cup cherry tomatoes halved
  • 1 medium red bell pepper chopped
  • ¼ medium red onion chopped
  • ¼ cup parsley or mint, basil, dill
  • ½ cup feta cheese crumbled
  • ½ cup tzatziki or Greek yogurt as lighter option

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together olive oil, lemon juice and zest, minced garlic, oregano, paprika, salt, and pepper. Add chicken and marinate for 15-45 minutes.
  2. Chop cucumber, cherry tomatoes, red bell pepper, and red onion into small pieces. Combine in a bowl with parsley, feta cheese, and lemon juice. Season with salt and pepper.
  3. Heat a non-stick skillet over medium-high heat. Cook marinated chicken for 3-5 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until fully cooked.
  4. Warm whole wheat pitas on a griddle for 1-2 minutes. Layer in cooked chicken, cucumber tomato salsa, and tzatziki to assemble the tacos.
