Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine bite-sized chicken chunks and sliced zucchini. Drizzle with olive oil, and add minced garlic, lemon juice, dried oregano, dried basil, salt, and pepper. Toss everything together until well-coated.
  3. Spread the mixture evenly into a 9x13-inch baking dish.
  4. Sprinkle a layer of shredded mozzarella and grated Parmesan cheese over the top.
  5. Bake uncovered for 25-30 minutes, until chicken reaches an internal temperature of 165°F and cheese is bubbly and golden brown.
  6. Remove from the oven, let rest for a few minutes, and garnish with fresh parsley before serving.
