For Flavoring

  • 1 teaspoon Chili Powder adjust according to taste
  • 1 teaspoon Smoked Paprika adjust according to taste

Method
 

Instructions
  1. Cook pasta according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a skillet, melt the butter over medium-high heat. Add corn and cook until golden and charred, about 8-10 minutes.
  3. Season the corn with chili powder and smoked paprika, then let it cool while preparing other ingredients.
  4. Combine cooled pasta, charred corn, mayonnaise, lime juice, crumbled cotija, and cilantro in a bowl. Mix well and adjust seasoning.
  5. Chill the salad for at least 30 minutes before serving to allow flavors to meld.
  6. Before serving, give the salad a gentle stir and garnish with additional cotija and cilantro.
