Step-by-Step Instructions for Mini Loaded Baked Potato Bites
  1. Preheat your oven to 400°F (200°C).
  2. Wash and dry the small red or yellow potatoes thoroughly. Coat each potato with olive oil and sprinkle kosher salt evenly over them.
  3. Place the oiled and seasoned potatoes on a baking sheet and bake in the preheated oven for 35-40 minutes until fork-tender but still firm.
  4. Remove the roasted potatoes and let them cool slightly. Cut off the tops and scoop out some of the insides to create little cups.
  5. Combine the scooped potato flesh with butter, sour cream, cheddar cheese, bacon, and chives in a bowl. Mash until well mixed and season.
