Method
 

Directions
  1. Preheat your oven to 175ºC (350ºF) and prepare your loaf pan by greasing it and lining it with parchment paper.
  2. In a mixing bowl, combine the brown sugar, granulated sugar, and oil. Whisk until smooth, then add the eggs and mix until glossy.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, spices, and salt. Gradually add to the wet mixture.
  4. Alternate adding the sour cream and vanilla extract, mixing until just combined.
  5. Gently fold in the grated carrots using a rubber spatula.
  6. Pour the batter into the prepared loaf pan, spread evenly, and bake for 1 hour and 5-15 minutes or until a tester comes out clean.
  7. After baking, cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. In a mixing bowl, beat the room-temperature butter and cream cheese together until fluffy, then gradually add powdered sugar and vanilla to mix until smooth.
  9. Once the loaf is cooled, spread the cream cheese frosting generously on top.
