Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Generously grease a 9x13-inch baking dish with butter.
  2. In a large mixing bowl, combine granulated sugar, brown sugar, all-purpose flour, ground cinnamon, and salt. Stir in lemon juice, orange zest, and vanilla extract. Fold in the drained canned peaches.
  3. Pour the peach filling into your prepared baking dish and spread evenly. Bake for 15 minutes.
  4. Prepare the topping by combining additional flour, sugar, and baking powder in a food processor. Add cold unsalted butter cubes and pulse until resembling coarse crumbs.
  5. Mix milk and lemon juice to create a buttermilk substitute. Stir in vanilla extract. Gradually add to the flour mixture until just combined.
  6. Spoon the topping over the hot peach filling as evenly as possible.
