Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium heat until melted and bubbly, about 2 minutes.
  2. Add 1 finely chopped yellow onion and sauté for about 3-4 minutes until translucent and fragrant. Then, add 2 minced garlic cloves and cook for an additional 1 minute.
  3. Stir in 1 cup of orzo pasta and toast for about 2 minutes. Then, pour in 1/2 cup of white wine if using, stirring to combine.
  4. Pour in 4 cups of chicken broth, ensuring the orzo is submerged. Increase heat to medium-high and simmer for about 10-12 minutes.
  5. Add 1 pound of thawed shrimp and cook for 4-5 minutes until pink and opaque.
  6. Reduce heat to low and stir in 1 cup of grated Parmesan cheese and 1/2 cup of heavy cream until creamy.
  7. Squeeze in the juice of 1 lemon, and sprinkle with salt, black pepper, and red pepper flakes. Stir in fresh parsley.
  8. Serve immediately in warm bowls, garnished with extra parsley and Parmesan if desired.
