Preparation Steps
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a stand mixer, combine softened butter and creamy peanut butter. Mix on medium speed for about 2-3 minutes until fluffy.
- Gradually mix in packed brown sugar, blending until smooth and creamy for about 1-2 minutes.
- Add one egg and a splash of water, beat on low speed until just combined.
- In a separate bowl, whisk together oats, flour, baking powder, baking soda, and salt. Gradually add to wet ingredients.
- Fold in 1.5 cups of chocolate chips, saving a few for topping.
- Scoop out 2-tablespoon-sized balls of dough on the prepared baking sheet, leaving space between each ball.
- Gently flatten each ball slightly with a fork and add 3-4 chocolate chips on top.
- Bake for 10-12 minutes until edges are golden and centers are set. Cool on the baking sheet for 5 minutes.
- Transfer to a wire rack to cool completely before serving.
