- In a large mixing bowl, whisk the double cream with icing sugar until soft peaks form, about 2 to 3 minutes.
- Beat the mascarpone and pistachio cream together in another bowl until completely smooth.
- Gently fold the mascarpone mixture into the whipped cream until well combined and creamy.
- Pour strong coffee into a shallow dish and allow it to cool. Quickly dip each savoiardi sponge finger into the coffee and layer them in a medium-sized dish.
- Spoon a layer of the pistachio cream mixture over the first layer of soaked ladyfingers.
- Repeat the process with another layer of soaked ladyfingers and pistachio cream mixture.
- Finish with a final layer of pistachio cream mixture on top.
- Pipe extra pistachio cream on top and create a feathered pattern. Cover with cling film and refrigerate for at least 6 hours.
- Before serving, sprinkle with chopped roasted pistachios.
