Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 tsp Sea Salt to season chicken
  • 2 tbsp Cornstarch for sauce stickiness
For the Sauce
  • 3 tbsp Low Sodium Soy Sauce
  • 2 tbsp Hoisin Sauce
  • 1 tbsp Toasted Sesame Oil
  • 1 tbsp Rice Vinegar seasoned or unseasoned
  • 1 tbsp Brown Sugar honey can be used as an alternative
For the Vegetables
  • 1 pcs Red Bell Pepper chopped
  • 2 tsp Fresh Ginger minced
  • 2 cloves Minced Garlic
  • 1 cup Sliced Water Chestnuts optional
  • 2 tbsp Green Onions sliced for garnish
For Cooking
  • 2 tbsp Canola/Vegetable Oil for cooking

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine bite-sized chicken breast pieces with low sodium soy sauce, sea salt, and cornstarch, and let marinate for at least 10 minutes.
  2. Heat a large skillet or wok over medium-high heat and add canola oil. Once hot, add the marinated chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through.
  3. Add chopped red bell pepper, minced ginger, and garlic, stir-frying for 2-3 minutes until fragrant and vegetables are tender-crisp.
  4. If using, mix in sliced water chestnuts. Pour in hoisin sauce, toasted sesame oil, rice vinegar, and brown sugar, stirring to combine and let bubble for a minute or two.
  5. Prepare a slurry by mixing cornstarch with water and add it to the skillet, stirring as it cooks for an additional 2 minutes to thicken the sauce.
  6. Remove from heat, garnish with sliced green onions, and serve immediately over warm rice or stir-fried vegetables.
