Step-by-Step Instructions
  1. Begin by slicing the boneless chicken into thin strips and placing them in a bowl. Add the light soy sauce and baking soda to the chicken, tossing until well-coated. Allow the chicken to marinate for about 10 minutes while you prepare the other ingredients.
  2. In a separate bowl, combine the sesame oil, oyster sauce, dark soy sauce, sugar, rice vinegar, and water. Whisk the mixture until the sugar dissolves completely and the sauces are well blended.
  3. Heat a large skillet or wok over medium heat and add vegetable oil. Once the oil shimmers, stir in the finely chopped garlic and ginger. Sauté for about 1-2 minutes until fragrant.
  4. Add the marinated chicken to the skillet, spreading it out in a single layer. Sear without stirring for about 1-2 minutes until golden brown on one side, then stir until cooked through.
