Ingredients
  

For the Salad
  • 2-3 pieces Persian Cucumbers Substitute with English cucumbers if preferred.
  • 1 cup Cherry Tomatoes Grape tomatoes also work well.
  • 1 cup Sweet Corn Canned corn is a quick alternative.
  • 1 piece Orange Bell Pepper Feel free to use any bell pepper variety.
  • ¼ cup Red Onion Soak in ice water for a milder taste.
  • 1 bunch Cilantro Optional but highly recommended.
  • 1 bunch Mint Can be omitted if not available.
  • ½ cup Cotija Cheese Swap with queso fresco if needed.
For the Dressing
  • cup Extra Virgin Olive Oil
  • 1-2 pieces Fresh Lime Juice & Zest Fresh is key, avoid bottled varieties.
  • 2 tablespoons Red Wine Vinegar Apple cider vinegar can be a good substitute.
  • 1 tablespoon Honey Adjust to your personal taste.
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Dried Oregano
  • 1 teaspoon Chipotle Powder
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash and chop the cucumbers, orange bell pepper, and cherry tomatoes into bite-sized pieces. Dice the red onion, and chop cilantro and mint. Combine all in a large mixing bowl with Cotija cheese.
  2. In a medium bowl, whisk together olive oil, lime juice and zest, red wine vinegar, honey, garlic powder, oregano, chipotle powder, salt, and pepper until emulsified.
  3. Drizzle dressing over salad mixture and toss gently until coated.
  4. Cover and refrigerate for at least 1 hour to allow flavors to meld.
  5. Serve in a colorful bowl, garnished with extra herbs if desired.
