Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the boneless, skinless chicken breasts and pound to about ½ inch thick for even cooking.
  3. Mix together feta cheese, spinach, sun-dried tomatoes, minced garlic, and optional red pepper flakes until well combined.
  4. Season both sides of the chicken breasts with salt, black pepper, garlic powder, oregano, and smoked paprika.
  5. Place filling along one edge of each chicken breast, roll tightly, and secure with toothpicks or kitchen twine.
  6. In a skillet, heat olive oil over medium-high heat and sear the rolled chicken for 3-4 minutes until golden brown on each side.
  7. Transfer the skillet to the oven and bake for 25 minutes until the internal temperature reaches 165°F (75°C).
  8. Allow the chicken to rest for 5 minutes before slicing and serving.
