- Butterfly the boneless, skinless chicken breasts and pound to about ½ inch thick for even cooking.
- Mix together feta cheese, spinach, sun-dried tomatoes, minced garlic, and optional red pepper flakes until well combined.
- Season both sides of the chicken breasts with salt, black pepper, garlic powder, oregano, and smoked paprika.
- Place filling along one edge of each chicken breast, roll tightly, and secure with toothpicks or kitchen twine.
- In a skillet, heat olive oil over medium-high heat and sear the rolled chicken for 3-4 minutes until golden brown on each side.
- Transfer the skillet to the oven and bake for 25 minutes until the internal temperature reaches 165°F (75°C).
