Method
 

Instructions
  1. Cook the sausage by heating a skillet over medium heat and adding breakfast sausage. Cook for 5-7 minutes, breaking apart until browned. Drain excess fat and set aside.
  2. Crisp the potatoes in the same skillet over medium-high heat for 8-10 minutes until crispy and golden brown. Transfer to a plate and keep warm.
  3. Whisk the eggs with milk, salt, and pepper in a medium bowl until well combined and slightly frothy.
  4. Scramble the eggs in the skillet with melted butter over medium-low heat until just set but still moist, about 3-4 minutes.
  5. Warm the tortillas in a dry skillet over low heat or in the microwave for 15-20 seconds.
  6. Assemble the wraps by layering sausage, crispy potatoes, scrambled eggs, and cheese on a warm tortilla with optional green onions.
  7. Roll the wraps by folding the sides inward and then rolling from the bottom tightly.
  8. Serve warm with salsa on the side for a zesty flavor boost.
