Method
 

Step-by-Step Instructions
  1. Flatten the chicken breasts to about ½ inch thickness using a meat mallet.
  2. Season both sides of the chicken with salt and pepper.
  3. Wrap each chicken breast with two slices of prosciutto and a sage leaf.
  4. Dredge the wrapped chicken lightly in flour, shaking off excess.
  5. Heat olive oil and butter in a large skillet over medium-high heat.
  6. Cook chicken in the skillet, prosciutto side down, for 4-5 minutes until golden brown.
  7. Flip the chicken and add remaining butter, cooking until the internal temperature reaches 165°F.
  8. Remove chicken and deglaze the pan with chicken broth and optional white wine, simmering until slightly thickened.
  9. Return chicken to the skillet, allowing it to soak up the sauce, and serve.
