For the Bread
  • 4 slices Bread your favorite type, preferably whole grain
For the Spread
  • 2 tablespoons Mayonnaise reduce or substitute for a lighter option
  • 1 teaspoon Dijon Mustard optional
For the Fresh Crunch
  • 1 whole Red Onion sliced
  • 1 whole Tomato sliced

Method
 

Preparation Steps
  1. Generously season the boneless skinless chicken breasts with salt and pepper and let sit for about 5 minutes.
  2. Heat 1 tablespoon of olive oil in a skillet over medium-high heat; add chicken and cook for 6-7 minutes on each side until cooked through.
  3. While chicken rests, slice the avocado, cheese, red onion, and tomato into thin pieces.
  4. Spread mayonnaise and Dijon mustard on one side of each slice of bread; layer chicken, avocado, cheese, onion, and tomato.
  5. Grill assembled sandwiches in the skillet with butter or olive oil for 3-4 minutes on each side until golden and crispy.
  6. Remove from skillet, let cool for a minute, slice in half, and serve warm.
