Preparation Steps
- Generously season the boneless skinless chicken breasts with salt and pepper and let sit for about 5 minutes.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat; add chicken and cook for 6-7 minutes on each side until cooked through.
- While chicken rests, slice the avocado, cheese, red onion, and tomato into thin pieces.
- Spread mayonnaise and Dijon mustard on one side of each slice of bread; layer chicken, avocado, cheese, onion, and tomato.
- Grill assembled sandwiches in the skillet with butter or olive oil for 3-4 minutes on each side until golden and crispy.
- Remove from skillet, let cool for a minute, slice in half, and serve warm.
