- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- In a large bowl, combine chicken, zucchini, cherry tomatoes, onion, garlic, olive oil, oregano, basil, paprika, salt, pepper, and red pepper flakes. Toss until coated.
- Transfer mixture to prepared baking dish and layer with mozzarella and Parmesan cheese.
- Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is golden and chicken is cooked through.
