Step-by-Step Instructions
  1. Prepare a pot of boiling water, add fresh udon noodles and cook for 2-3 minutes until tender. Drain and set aside.
  2. In a large pan, heat vegetable oil over medium-high heat. Sauté onion, garlic, and ginger for 1-2 minutes until fragrant.
  3. Add sliced beef, stir-fry for 1-2 minutes until browned and cooked through.
  4. Pour in soy sauce, oyster sauce, tomato paste, and black pepper. Stir for 30 seconds until well mixed.
  5. Incorporate noodles and 1 cup of water, toss gently for 2-3 minutes until noodles are coated and heated.
  6. Create a cornstarch slurry and pour into the pan while stirring. Cook for another minute until sauce thickens.
  7. Fold in greens and cook for 1 minute until wilted and vibrant.
  8. Serve hot, adjusting seasoning as necessary.
