Step-by-Step Instructions
  1. Preheat your oven to 375°F and gather a large pot for the stew.
  2. Add the butter and olive oil to the pot, melting them together.
  3. Season the cubed top sirloin with salt and pepper, then sauté for 6-8 minutes until browned on all sides.
  4. Stir in the chopped onion and carrots, cooking for an additional 4-5 minutes until softened.
  5. Sprinkle flour over the mixture, stirring to incorporate and letting it cook for 1-2 minutes.
  6. Pour in the apple cider and beef broth, stirring and bringing to a gentle boil, then reduce heat.
  7. Transfer the pot to the oven, cover with a lid, and bake for 1 to 1.5 hours.
  8. Peel and chop the potatoes, boiling them until fork-tender for 15-20 minutes.
  9. Mash the boiled potatoes with milk, sour cream, and cheddar cheese, folding in chives.
