Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the ground beef and diced onions. Cook for 5-7 minutes until the beef is browned and onions translucent.
  3. Stir in the minced garlic, cumin, and chili powder. Cook for another minute until garlic is fragrant.
  4. Take a corn tortilla, spoon beef mixture down the center, roll tightly, and place seam-side down in a greased baking dish. Repeat with remaining tortillas.
  5. Pour enchilada sauce over the rolled enchiladas and sprinkle with shredded cheese.
  6. Bake uncovered for 20-25 minutes until cheese is bubbly and golden brown.
