Ingredients

For the Clams
  • 2 lbs Frozen Precooked Clams Fresh clams can be substituted if available.
For the Sauce
  • 10 cloves Garlic Minced; fresh garlic works best here!
  • 4 tbsp Butter For a lighter option, use unsalted or reduce the amount.
  • 0.5 tbsp Oil A neutral oil or olive oil works well.
  • 2 tsp Chili Flakes Adjust to taste; omit for a milder dish.
  • 1 cup Heavy Whipping Cream Try half-and-half or coconut milk for a lighter alternative.
  • 2 tsp Paprika Smoked paprika can enhance the flavor profile.
  • 0.75 tsp Salt Adjust to taste; coarse salt recommended.
  • 2 tsp Sugar Adjust to taste; can be omitted.
  • 1 tsp Curry Powder Optional; skip for a classic taste.
  • 2 tsp Lemon Juice Use freshly squeezed for the best results.

Equipment

  • skillet

Method

Step-by-Step Instructions
  1. In a large skillet, melt 3 tablespoons of butter and ½ tablespoon of oil over medium-high heat. Once hot, add the minced garlic and reduce the heat to medium-low. Sauté the garlic for about 1 minute, until fragrant and golden, then sprinkle in the chili flakes and continue to cook for an additional 1-2 minutes.
  2. Pour in the heavy whipping cream, stirring constantly to combine all the ingredients. Sprinkle in the paprika, salt, sugar, and optional curry powder, mixing well. Bring the mixture to a gentle simmer for about 2-3 minutes.
  3. Gently add the frozen precooked clams into the creamy sauce, and cover the skillet with a lid. Let the clams heat through for about 1 minute, then uncover and stir. Allow it to simmer uncovered for an additional 3-5 minutes.
  4. Once the clams are cooked and the sauce has thickened beautifully, turn off the heat. Stir in the remaining tablespoon of butter and lemon juice, mixing until combined. Serve hot.
