  1. Prepare the Peanut Sauce by whisking together peanut butter, soy sauce, honey, and a splash of water until smooth. Set aside.
  2. Heat vegetable oil in a skillet over medium heat, add ground chicken, and sauté for 6-8 minutes until browned. Set aside.
  3. In the same skillet, add remaining oil, coleslaw mix, and sliced carrots. Stir-fry for 3-4 minutes until tender-crisp.
  4. Combine the cooked chicken and peanut sauce in the skillet, stirring until coated and heated through for 2-3 minutes.
  5. Mix in green onions and cilantro just before serving, stirring gently to combine.
