  • 0.5 tsp Ground sage Skip if preferring milder flavor.
  • 0.25 tsp Pepper Freshly cracked for spice.
For the Finish
  • 1.5 cups Shredded Gruyère cheese Cheddar can be substituted.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 13×9 inch baking pan with non-stick cooking spray.
  2. Cut French bread into 1-inch cubes and spread on a baking sheet; lightly bake fresh bread if necessary.
  3. Cook the sausage in a skillet over medium-high heat until browned, about 7-10 minutes, draining excess fat afterward.
  4. Sauté diced onion in olive oil for 2-3 minutes until softened, then add diced apples and cook for 3-4 minutes. Stir in fresh sage.
  5. In a large bowl, whisk together eggs, milk, heavy cream, kosher salt, nutmeg, ground sage, and pepper until blended.
  6. Layer half the bread cubes in the baking dish, followed by half of the sausage-vegetable mixture. Repeat with remaining ingredients.
  7. Pour the custard mixture over the layers and lightly toss the bread cubes; let sit for about 5 minutes to absorb.
  8. Sprinkle half of the Gruyère cheese over the top and bake for 50-60 minutes until a knife comes out clean.
  9. Let cool slightly and serve warm, ideally alongside roast turkey and gravy.
