  • 8 oz Pasta Can substitute with gluten-free pasta
For the Sauce
  • 1 can Coconut Milk Full-fat for best flavor
  • 2 tbsp Jamaican Jerk Seasoning Adjust according to spice preference
  • 2 tbsp Lime Juice Use freshly squeezed for best flavor
For the Protein
  • 1 lb Shrimp Fresh or thawed frozen shrimp
  • 2 tbsp Olive Oil For sautéing
For the Aromatics
  • 1 medium Onion Chopped
  • 3 cloves Garlic Minced
  • 1 medium Bell Pepper Diced
For the Garnish
  • 1/4 cup Cilantro Chopped
  • 2 split Lime Wedges For serving

Method
 

Cooking Instructions
  1. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent, then add garlic and bell pepper. Cook for an additional 2-3 minutes.
  3. Increase heat to medium-high. Add shrimp seasoned with salt, pepper, and Jamaican jerk seasoning. Cook for 3-4 minutes until shrimp are pink and opaque.
  4. Reduce heat to medium, pour in coconut milk and lime juice. Simmer for 3-5 minutes, adding reserved pasta water if sauce is too thick.
  5. Add drained pasta into the skillet and toss everything together for about 2 minutes until well-coated.
  6. Serve the pasta garnished with cilantro and lime wedges.
