Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat for about 1-2 minutes until shimmering.
  2. Add 1 pound of lean ground beef and 1 diced onion to the skillet. Sauté until nearly browned, 5-7 minutes.
  3. Stir in 3 cloves of grated garlic, 2 tablespoons of chili powder, and 1 tablespoon of ground cumin. Season with kosher salt and black pepper to taste.
  4. Add 2 cups of diced sweet potatoes, one can of fire roasted diced tomatoes, one can of diced green chiles, and about 1 cup of water. Stir well to combine.
  5. Cover and let the mixture simmer over medium heat for about 20 minutes until sweet potatoes are tender.
  6. Return the cooked beef mixture to the skillet and stir thoroughly for 2-3 minutes.
  7. Top with 1 cup of shredded cheddar cheese and cover for about 1 minute to melt.
  8. Remove from heat and sprinkle with freshly chopped cilantro before serving.
