Cooking Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat for about 1-2 minutes until shimmering.
- Add 1 pound of lean ground beef and 1 diced onion to the skillet. Sauté until nearly browned, 5-7 minutes.
- Stir in 3 cloves of grated garlic, 2 tablespoons of chili powder, and 1 tablespoon of ground cumin. Season with kosher salt and black pepper to taste.
- Add 2 cups of diced sweet potatoes, one can of fire roasted diced tomatoes, one can of diced green chiles, and about 1 cup of water. Stir well to combine.
- Cover and let the mixture simmer over medium heat for about 20 minutes until sweet potatoes are tender.
- Return the cooked beef mixture to the skillet and stir thoroughly for 2-3 minutes.
- Top with 1 cup of shredded cheddar cheese and cover for about 1 minute to melt.
- Remove from heat and sprinkle with freshly chopped cilantro before serving.
