- Prepare the 'eyeballs' with mozzarella balls. Carve small indents and press finely chopped kalamata olives into them.
- Dice the pepperoni stick into ¾-inch chunks for the skewers. Reserve some slices for later.
- Slice the red bell pepper into wedges about an inch wide.
- On each skewer, thread a red pepper wedge first, followed by a chunk of pepperoni and then a mozzarella 'eyeball'. Layer another mozzarella ball on top with an extra slice of pepperoni.
- Once all skewers are assembled, chill in the refrigerator for at least 30 minutes before serving.
