Step-by-Step Instructions
  1. Begin by seasoning cornstarch with a pinch of salt and pepper in a bowl. Toss your chicken breast pieces in the mixture until they are evenly coated. Set the coated chicken aside.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add the coated chicken pieces and fry for about 5-7 minutes, turning occasionally until golden brown. Remove from skillet.
  3. In the same skillet, add the sliced onion and sauté for about 3-4 minutes until soft and translucent.
  4. Incorporate the chopped red and yellow bell peppers and stir-fry for about 2-3 minutes until softened but still crunchy.
  5. In a bowl, whisk together ketchup, cider vinegar, brown sugar, soy sauce, fresh ginger, and minced garlic until smooth. Set aside.
  6. Pour the sauce mixture into the skillet with sautéed vegetables and bring to a gentle simmer for about 3-4 minutes.
  7. Return the fried chicken pieces to the skillet, stir to coat, and let it simmer for another 5-6 minutes until fully cooked.
