  • 2 medium Sweet Potatoes Fresh, peeled and sliced
  • 2 tablespoons Olive Oil Or avocado oil for a subtler twist
  • to taste Salt
  • to taste Pepper
For the Topping
  • 8 ounces Brie Cheese Can substitute with camembert
  • 1 cup Dried Cranberries Fresh cranberries or raisins can be used
  • 1/2 cup Toasted Pecans Can replace with walnuts or pistachios
  • to taste Fresh Rosemary or Thyme Optional

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Wash the sweet potatoes, peel them, and slice into ¼-inch thick rounds. Arrange on the baking sheet.
  3. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly. Roast for 20–25 minutes, flipping halfway.
  4. Remove from the oven and place a slice of brie on each round. Return to the oven for 5 minutes.
  5. Add dried cranberries and toasted pecans on top. Garnish with rosemary or thyme before serving warm.
