Preparation Steps
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Wash the sweet potatoes, peel them, and slice into ¼-inch thick rounds. Arrange on the baking sheet.
- Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly. Roast for 20–25 minutes, flipping halfway.
- Remove from the oven and place a slice of brie on each round. Return to the oven for 5 minutes.
- Add dried cranberries and toasted pecans on top. Garnish with rosemary or thyme before serving warm.
