Method
 

Step‑by‑Step Instructions

  2. Wash and peel the sweet potatoes, then slice them into ¼-inch thick rounds and arrange them on the prepared baking sheet.
  3. Drizzle the sweet potato rounds with olive oil, season with salt and pepper, and roast for 20–25 minutes, flipping halfway.
  4. Top each roasted round with a slice of brie cheese and return to the oven for an additional 5 minutes until melted.
  5. Sprinkle the rounds with dried cranberries and toasted pecans, garnish with fresh herbs if desired, and serve warm.
