- In a blender, combine cottage cheese, rolled oats, egg, honey or maple syrup, vanilla extract, lemon zest, baking powder, and salt. Blend on high until smooth, about 30-45 seconds.
- Transfer the blended batter to a mixing bowl and gently fold in the blueberries.
- Allow the batter to sit for about 5 minutes to thicken.
- Fill each greased muffin cup about three-quarters full with batter.
- Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
