  • 4 cups Sweet Potatoes sliced thinly
  • 1 cup Heavy Cream or coconut cream for dairy-free
  • 1/2 cup Brown Sugar or coconut sugar
  • 4 tablespoons Butter or vegan butter
  • 1 teaspoon Cinnamon optional
  • 1 teaspoon Nutmeg or ground ginger
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla Extract or almond extract
  • 1 cup Mini Marshmallows optional
For Topping
  • 1 tablespoon Fresh Herbs optional

Method
 

Preparation Steps
  1. Preheat the oven to 375°F (190°C) and grease a 9x13 inch baking dish with butter or non-stick spray.
  2. Slice sweet potatoes into thin rounds, approximately ⅛ inch thick.
  3. Melt 4 tablespoons of butter in a medium saucepan, whisking in brown sugar, heavy cream, cinnamon, nutmeg, and salt until smooth.
  4. Layer sweet potatoes in the greased baking dish, pouring the creamy sauce over each layer.
  5. Cover with aluminum foil and bake for 35 minutes.
  6. Remove the foil and bake uncovered for an additional 20 to 25 minutes until golden.
  7. If using, sprinkle mini marshmallows over the casserole during the last 5 minutes of baking.
  8. Let cool for a few minutes before serving, optionally garnishing with cinnamon or fresh herbs.
