Cooking Steps
  1. Heat the oil in a large skillet over medium heat until it shimmers, about 1-2 minutes.
  2. Add the diced shallots and minced garlic, cooking for about 3 minutes until translucent.
  3. Toss in the cherry or grape tomatoes and cook for around 10 minutes, pressing to burst them.
  4. Stir in the tomato paste, roasted red peppers, salt, basil, Italian seasoning, and black pepper; cook for 2 more minutes.
  5. Reduce heat to low and pour in the heavy cream, simmering for 2-3 minutes until thickened.
  6. Fold in the Parmesan cheese, cooked tortellini, and chopped spinach, stirring until combined.
  7. Taste and adjust seasoning if needed, topping with remaining Parmesan before serving.
