  • 1 teaspoon Onion Powder Adjust to taste
  • 1/2 teaspoon Black Pepper
  • 1/4 cup Milk Any milk or non-dairy alternative
For the Toppings
  • 1 cup Bacon Optional for vegetarian version
  • 1/4 cup Scallion Can substitute with chives

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Wash and dry the russet potatoes, prick with a fork, rub with olive oil, and sprinkle with salt.
  3. Bake the potatoes on a baking sheet for 45-60 minutes until fork-tender.
  4. Cool for 15 minutes, then cut in half and scoop out the flesh into a mixing bowl.
  5. Mix the potato flesh with sour cream, butter, cheeses, garlic powder, onion powder, salt, and black pepper until smooth.
  6. Spoon the filling back into the potato skins, top with reserved cheddar cheese, and bake for 15 minutes.
  7. Sprinkle with bacon and scallions before serving warm.
