Step-by-Step Instructions
  1. In a medium bowl, mash a ripe avocado with a fork until smooth, leaving some chunks for texture. Add a splash of lemon juice along with salt and pepper to taste, mixing until well combined.
  2. Take two slices of your favorite sourdough or artisan bread, spreading mayonnaise evenly on one side of each slice. On one slice, layer the avocado mixture generously, followed by a handful of cooked shredded chicken, and a slice of cheddar or Monterey Jack cheese. Place the second slice on top, mayo side facing outward.
  3. Heat a skillet over medium heat and add a tablespoon of butter, allowing it to melt and coat the pan. Carefully place the assembled Chicken Avocado Melt Sandwich into the skillet, cooking for about 3–4 minutes until the bottom is golden brown.
  4. Using a spatula, carefully flip the sandwich to the other side, cooking for an additional 3–4 minutes until the second side is also golden brown and the cheese is fully melted.
  5. Remove the sandwich from the skillet and let it cool slightly. Slice diagonally and serve warm with a fresh garden salad or sweet potato fries.
