- Lightly spray the inside of your slow cooker with non-stick cooking spray.
- In the prepared slow cooker, add the shredded cooked chicken, softened cream cheese, ranch dressing, buffalo sauce, and shredded cheddar cheese. Stir until well combined.
- Cover the slow cooker and set it to low for 2½ to 3 hours.
- About 30 minutes before serving, sprinkle reserved cheddar cheese on top and cook until melted.
- Remove the lid, top with crumbled blue cheese and sliced scallions, and serve warm with tortilla chips or fresh vegetables.
