  • 8 ounces button mushrooms or shiitake mushrooms
  • 2 cloves garlic fresh is best, but jarred minced works
  • 10.5 ounces cream of mushroom soup can use cream of chicken or cream of celery
  • 0.5 cup milk heavy cream can be used for richness
  • 1 cup Monterey Jack cheese or cheddar, mozzarella
  • 2 cans canned green beans or about 2 pounds of fresh blanched green beans
  • 1 cup French fried onions substitute with crushed crackers for crunch
Optional Toppings
  • 1 cup crushed crackers for an additional crunchy topping

Equipment

  • 9x13-inch baking dish
  • Large skillet

Method

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  2. Cook diced bacon in a skillet over medium-low heat until crispy, about 6-8 minutes. Remove and crumble, leaving 2 tablespoons grease in the skillet.
  3. Sauté diced yellow onion in the remaining grease for 3-4 minutes until translucent.
  4. Add chopped button mushrooms and cook for 5-6 minutes, then stir in minced garlic for 1-2 minutes.
  5. Stir in cream of mushroom soup, crumbled bacon, milk, and Monterey Jack cheese. Mix until the cheese melts and becomes creamy.
  6. Gently fold in drained canned green beans until evenly coated, being careful not to overmix.
  7. Transfer to the prepared baking dish, top with French fried onions, and bake uncovered for 30 minutes or until golden brown.
