Preparation
- In a mixing bowl, whisk together ½ cup of Greek yogurt, ¼ cup of mayonnaise, ⅓ cup of high-quality olive oil, 3 tablespoons of red wine vinegar, and the juice of one fresh lemon. Add ¼ cup of freshly grated Parmesan cheese, 1 teaspoon each of dried parsley, dill, oregano, and basil, along with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes.
- Wash and chop 4 cups of Romaine lettuce into bite-sized pieces and add to a large salad bowl. Halve 1 cup of cherry tomatoes and slice ½ a cucumber into thin rounds. Incorporate these ingredients into the bowl.
- Slice ½ cup of pepperoncini and add them to the mixture along with ½ cup of pitted Kalamata olives. Finely chop ¼ of a red onion and toss that in as well.
- Add about 1 cup of croutons into the bowl and gently toss the salad to combine all components without smashing the croutons.
- Drizzle a generous amount of chilled dressing over the salad, starting with about half, and toss gently to coat all ingredients evenly.
- If serving right away, enjoy your refreshing Mediterranean Salad! For later, keep the dressing and croutons separate until serving.
