Ingredients
  

For the Salad
  • 4 cups Romaine Lettuce Chopped into bite-sized pieces
  • 1 cup Cherry Tomatoes Halved
  • ½ cucumber Cucumber Sliced into thin rounds, skin on
  • ½ cup Pepperoncini Sliced
  • ½ cup Kalamata Olives Pitted
  • ¼ cup Red Onion Finely chopped
  • 1 cup Croutons Store-bought or homemade
  • ½ cup Feta Cheese Crumbled
For the Dressing
  • ½ cup Greek Yogurt Creamy base for dressing
  • ¼ cup Mayonnaise For smooth texture
  • cup Olive Oil High-quality extra virgin
  • 3 tablespoons Red Wine Vinegar Adds acidity
  • 1 unit Lemon Juice Fresh, juice of one lemon
  • ¼ cup Parmesan Cheese Freshly grated
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Dill
  • 1 teaspoon Oregano
  • 1 teaspoon Basil

Method
 

Preparation
  1. In a mixing bowl, whisk together ½ cup of Greek yogurt, ¼ cup of mayonnaise, ⅓ cup of high-quality olive oil, 3 tablespoons of red wine vinegar, and the juice of one fresh lemon. Add ¼ cup of freshly grated Parmesan cheese, 1 teaspoon each of dried parsley, dill, oregano, and basil, along with salt and pepper to taste. Chill in the refrigerator for at least 30 minutes.
  2. Wash and chop 4 cups of Romaine lettuce into bite-sized pieces and add to a large salad bowl. Halve 1 cup of cherry tomatoes and slice ½ a cucumber into thin rounds. Incorporate these ingredients into the bowl.
  3. Slice ½ cup of pepperoncini and add them to the mixture along with ½ cup of pitted Kalamata olives. Finely chop ¼ of a red onion and toss that in as well.
  4. Add about 1 cup of croutons into the bowl and gently toss the salad to combine all components without smashing the croutons.
  5. Drizzle a generous amount of chilled dressing over the salad, starting with about half, and toss gently to coat all ingredients evenly.
  6. If serving right away, enjoy your refreshing Mediterranean Salad! For later, keep the dressing and croutons separate until serving.
