  • 2 tablespoons lime juice freshly squeezed
  • 2 tablespoons apple cider vinegar or white vinegar as an alternative
  • 1 tablespoon sugar or use honey/agave syrup
  • 1 teaspoon ground cumin or smoked paprika as a substitute

Method
 

Step-by-Step Instructions
  1. Finely shred about 4 cups of cabbage and 1 cup of carrots. Add about 0.5 cup of chopped cilantro and 0.25 cup of sliced green onions. Gently toss together.
  2. In a separate small bowl, whisk together 0.5 cup of mayonnaise, juice of 2 fresh limes, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1 teaspoon of ground cumin, and salt and pepper to taste.
  3. Pour the dressing over the veggie mixture and fold gently to coat the vegetables evenly.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, give another gentle toss and adjust seasoning if necessary.
