Step‑by‑Step Instructions for Mango Lime Rice
- Rinse the basmati rice under cold running water until the water runs clear, about 2-3 minutes. Set aside to drain.
- Combine the rinsed basmati rice with 1 ¾ cups of water or flavorful vegetable broth in a medium saucepan. Season with salt and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes.
- Remove from heat and let sit, covered, for 5 minutes. Fluff rice with a fork.
- Dice the ripe mango into small cubes, zest and juice the lime.
- In a large bowl, mix fluffed rice with diced mango, lime zest, juice, and chopped cilantro. Drizzle with oil, and season with salt and pepper to taste.
- Gently stir to combine, serve warm or at room temperature, garnished with lime wedges and additional cilantro.
