Method
 

Step‑by‑Step Instructions for Mango Lime Rice
  1. Rinse the basmati rice under cold running water until the water runs clear, about 2-3 minutes. Set aside to drain.
  2. Combine the rinsed basmati rice with 1 ¾ cups of water or flavorful vegetable broth in a medium saucepan. Season with salt and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes.
  3. Remove from heat and let sit, covered, for 5 minutes. Fluff rice with a fork.
  4. Dice the ripe mango into small cubes, zest and juice the lime.
  5. In a large bowl, mix fluffed rice with diced mango, lime zest, juice, and chopped cilantro. Drizzle with oil, and season with salt and pepper to taste.
  6. Gently stir to combine, serve warm or at room temperature, garnished with lime wedges and additional cilantro.
